Released in May 2020, this single cask release from Bimber captures the distillery at cask strength: bottled at 58.3% alc. straight from one ex-bourbon barrel, with no dilution to bring it down to a standard proof. Batch 8 yielded just 267 bottles, so every one carries the character of this particular cask rather than a blend of several.

On the nose, there's orange and lemon citrus alongside ripe papaya, with coconut and a vanilla sweetness that calls to mind buttercream and maple syrup. The palate brings orchard fruit, apple in particular, and more citrus peel, set against popped corn and toasted oats, with the oak itself coming through as a peppery, spiced note rather than sitting quietly in the background. The finish is long, dry and properly spiced from the ex-bourbon oak.

Bimber was founded in 2015 in Park Royal, west London, with the first cask filled in May 2016. Bimber is a whisky distillery located in London. 'Bimber' means moonshine in Polish. The founders of the distillery emigrated to London from Poland in 2003 to start their business. The first casks were filled in May 2016. Since 2019, the distillery has been bottling Whisky in small batches or from single casks. Among them are mainly Ex-Bourbon and Sherry casks but also fresh Virgin Oak casks.
