Old Tom Gin is an old fashioned style of sweeter Gin popular in the 18th and 19th centuries. They typically include botanicals such as juniper, coriander, angelica, fresh orange peel, liquorice root, ground ginger, caraway, and cardamom. The most obvious difference between an Old Tom Gin and a London Dry Gin is in sweetness. Often just a touch of sugar is added during production. Old Tom Gin can work particularly well in cocktails such as a Tom Collins.
