Filey Bay Sherry Cask Reserve #7 English Whisky, 70cl
Sherry Cask Reserve #7 is the seventh and final bottling of Filey Bay's annual winter release, and it closes the series with a cask pairing that is rarely seen. Whisky Director Joe Clark married first-fill ex-Moscatel casks with first-fill ex-Pedro Ximénez casks, aiming for a whisky built around cherries and dark chocolate.
The two casks do different jobs. Pedro Ximénez, the darkest and sweetest style of sherry, brings depth, brown sugar and dried fruit; Moscatel adds a fresher, fruitier sweetness that lifts the whole whisky. It is noticeably different from last year's #6, which came from ex-Oloroso casks.
Tasting notes: Soft, rich and layered, with dark chocolate, cherries, brown sugar and dried fruit.
We think the Moscatel and PX pairing makes this one of the more unusual releases in the series, and a fitting way to close it. It is a whisky made for the winter months. At 46% Alc., it works neat, and a drop of water is there if you want it. This final release runs to 2,000 bottles.
Spirit of Yorkshire Distillery makes Filey Bay single malt at Hunmanby, on the North Yorkshire coast, close to the bay that gives the whisky its name. The distillery celebrates ten years of distilling in 2026.
