Whilst sherries like Pedro Ximenez and Oloroso are well known in single malt whisky maturation, Moscatel is much more rare and unusual. Moscatel grapes are known for floral aromas. The grapes thrive in sandy soil and Moscatel vineyards are close to the beaches in the sherry region of Spain – making it a perfect match for our Filey Bay whisky, made here on the Yorkshire Coast.

This whisky is made using the Spirit of Yorkshire's unique solera-style approach which is, technically, a fractional blending method. Every time Filey Bay Moscatel Sherry Cask is bottled, casks are carefully and incrementally topped up with older casks selected from the warehouse. This keeps the flavour profile consistent, while allowing the whisky to gain age, depth and complexity.
