Cotswolds Signature Single Malt Whisky, 70cl, 46% Alc. The distillery's original single malt, matured in a mix of ex-bourbon and red wine casks. Think honey, butterscotch and orchard fruit, with marzipan and a treacly, spiced-marmalade sweetness underneath.
Cotswolds Sherry Cask Single Malt Whisky, 70cl, 57.4% Alc. Matured in American and Spanish oak that previously held Oloroso and Pedro Ximénez sherry. Toasty fruitcake, dried fruit and candied ginger sit alongside spiced apple on the nose.
Cotswolds Peated Cask Single Malt Whisky, 70cl, 59.6% Alc. Made with floor-malted Odyssey barley and rested in small ex-peated quarter casks. The result is a gentle, well-integrated smokiness rather than heavy peat.
Cotswolds Bourbon Cask Single Malt Whisky, 70cl, 59.1% Alc. Matured entirely in first-fill ex-bourbon casks, bringing rich vanilla, orchard fruit and toasty oak through to a honeyed, malty finish. Non-chill filtered, natural colour.
Cotswolds Founder's Choice Single Malt Whisky, 70cl, 60.5% Alc. Matured in shaved, toasted and re-charred American oak red wine casks (a process developed by the late Dr. Jim Swan) and bottled at cask strength. Toffee, toasted oak and dried fruit carry through from a deep amber colour.
Cotswolds Distillery was founded in 2014 by Daniel Szor in Stourton, near Shipston-on-Stour, Warwickshire, and was the first distillery to make single malt whisky in the Cotswolds. They grow and source their barley locally, distil through their own copper pot stills, and mature across a wide range of cask types, from ex-bourbon to sherry butts and Dr. Jim Swan's shaved, toasted and re-charred red wine casks.
