Cooper King's Expedition Series is built on a simple idea: follow the casks wherever they lead. Port-Bound, the Spring 2026 release, took that idea literally. Originally planned as a Christmas release, the small tawny port casks Will Dobson selected for finishing simply weren't ready. Four more months of patience later, and the result makes the wait easy to justify.

This is a 4.5 year old English single malt, matured first in NEOC and Cognac casks before its port cask finish. The tawny port influence has added real depth without overwhelming the base spirit: expect sticky dried stone fruit, muscovado sugar and marmalade on the nose; an indulgent palate of liquorice root and affogato; and a finish of coffee crema, dark chocolate cherries and lingering tobacco. All natural colour. Non-chill filtered. 48% Alc. Just 924 bottles.

Cooper King is one of the most interesting distilleries in English whisky. Founded in 2016 by Dr. Abbie Neilson and Chris Jaume in Sutton-on-the-Forest, ten miles north of York, it is the only self-built whisky distillery in England and runs entirely on renewable energy. In our view, their Expedition Series releases consistently punch above their weight for a distillery of their age; Port-Bound is a strong case for that argument.

Tasting Notes

Nose

Maple syrup and sticky dried stone fruit lead, with rum and raisin richness and a layer of sweet prunes. The port cask adds a jammy depth without masking the malt.

Palate

Muscovado sugar and bitter marmalade; liquorice root and the cold sweetness of an affogato. Rich and layered, with the Cognac cask maturation adding roundness beneath.

Finish

Coffee crema lingers alongside dark chocolate cherries and a faint tobacco note. Medium-long and warming; the port cask has the last word.

What Makes Port-Bound Distinctive

  • An unplanned extra four months: Originally a Christmas 2025 release, the whisky simply wasn't ready. Will Dobson, Cooper King's brewer and distiller, held it back until it was. That patience is audible in the glass.
  • Three cask types: NEOC and Cognac maturation followed by a tawny port finish is an unusual combination. The result is a whisky with more structural complexity than most port-finish releases at this price point.
  • Heritage barley, floor-malted: All Cooper King whisky is made from English Maris Otter barley, floor-malted at Warminster Maltings, Britain's oldest working maltings.
  • 924 bottles only: Each Expedition Series release is drawn from a specific parcel of casks. Once gone, this expression will not be repeated.
  • Net zero energy distillery: Cooper King is England's only net zero energy whisky distillery, running entirely on renewable power. £1 from every bottle goes to Yorkshire Dales Millennium Trust.

About Cooper King Distillery

Cooper King was founded in 2016 by Dr. Abbie Neilson and Chris Jaume in Sutton-on-the-Forest, ten miles north of York. The couple built the distillery themselves after a formative trip to Tasmania, where they encountered small producers taking a rigorous, hands-on approach to spirits. Cooper King is England's only self-built whisky distillery and the first to produce whisky with net zero energy. Their Expedition Series releases each explore a specific set of casks from the warehouse; no two expressions are the same, and none are repeated.

Port Cask Finishing in English Whisky

Port cask finishing is well-established in Scotch whisky, but comparatively rare in English single malt — partly because most English distilleries are young and working with relatively small cask inventories. Cooper King's use of small, fresh tawny port casks for finishing is notable: smaller casks mean greater wood-to-spirit contact and faster flavour development, which is why Port-Bound carries such pronounced port character for a 4.5 year old whisky.

Frequently Asked Questions

Q: What is the Cooper King Expedition Series?

A: The Expedition Series is Cooper King's programme of limited whisky releases, each drawing from a specific selection of casks in their Yorkshire warehouse. Every release has a distinct character and is bottled in small quantities; the Spring 2026 release, Port-Bound, is limited to 924 bottles. Once sold out, the expression is not repeated.

Q: What does tawny port cask finishing do to a whisky?

A: Tawny port casks contribute dried fruit sweetness, a hint of nuttiness, and a warming richness to the spirit. In Port-Bound, the small, fresh tawny port casks have added muscovado sugar, dried stone fruit, and a coffee-and-dark-chocolate quality to the finish. The effect is indulgent without becoming syrupy, because the NEOC and Cognac maturation provides a drier structural backbone underneath.

Q: Is Cooper King whisky suitable for someone who normally drinks Scotch?

A: It's a good fit for Scotch drinkers who enjoy port-finished expressions such as GlenDronach or Ben Nevis port wood finishes. Port-Bound has a similar profile: rich, fruit-forward, with a long finish. The main difference is the English character - a little lighter in body, with the Maris Otter barley adding its own distinct maltiness.

Q: How limited is Port-Bound and will it be available again?

A: Port-Bound is limited to 924 bottles worldwide. Each Expedition Series release is drawn from a unique parcel of casks; once this release sells out, this particular whisky will not be produced again. Cooper King will release future Expedition Series expressions, but each will have its own distinct character.

Q: Where is Cooper King Distillery located?

A: Cooper King is based in Sutton-on-the-Forest, North Yorkshire, approximately ten miles north of York. The distillery sits in the Howardian Hills Area of Outstanding Natural Beauty, between the Yorkshire Dales and the North York Moors. Visits and tours are available; Digital Distiller lists Cooper King's distillery tours if you'd like to go.
