bimber-ex-bourbon-cask-batch-8-single-malt-whisky-70cl
Bimber Ex Bourbon Cask Batch 8 Single Malt Whisky, 70cl

Released in May 2020, this single cask release from Bimber captures the distillery at cask strength: bottled at 58.3% alc. straight from one ex-bourbon barrel, with no dilution to bring it down to a standard proof. Batch 8 yielded just 267 bottles, so every one carries the character of this particular cask rather than a blend of several.

On the nose, there's orange and lemon citrus alongside ripe papaya, with coconut and a vanilla sweetness that calls to mind buttercream and maple syrup. The palate brings orchard fruit, apple in particular, and more citrus peel, set against popped corn and toasted oats, with the oak itself coming through as a peppery, spiced note rather than sitting quietly in the background. The finish is long, dry and properly spiced from the ex-bourbon oak.

We think cask strength releases like this show Bimber's house style at its clearest. At 58.3% Alc., there's enough power to carry the fruit and spice without the whisky feeling rough or unbalanced.

Bimber was founded in 2015 in Park Royal, west London, with the first cask filled in May 2016. The distillery floor-malts its own English barley at Warminster Maltings and runs its own handmade copper stills, fired directly rather than by steam; production, from mashing through to bottling, all happens on site.

Bimber is a whisky distillery located in London.
