Cotswolds Old Tom Gin is a spicy and sweet Old Tom expression, boasting liquorice root, ginger, cardamom and caraway among the botanicals. Only a small amount of sugar is added, with the sweeter botanicals - liquorice in particular - strong in the flavour profile. Perfect for those Tom Collins' you've been wanting to make.

An earthy sweetness leads into big, warming notes of cardamom and ginger, with sweet orange peel and a liquorice finish.

Tom Collins

  • 50ml Cotswolds Old Tom Gin
  • 25ml lemon juice
  • 20ml sugar syrup
  • Soda water

To Make

  • Mix the first three ingredients in an ice-filled highball glass. Top with soda water and garnish with a slice of orange.
